Peanut butter and honey refrigerator cookies with crunchy peanuts for extra texture.
Ingredients:
  • 0.66666668653488 cup peanut butter
  • 0.33333334326744 cup shortening
  • 0.5 cup honey
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.5 cup chopped peanuts
Instructions:
  • In a large bowl, mix together peanut butter, shortening, sugar, honey, and egg until well blended using an electric mixer.
  • Combine the flour, baking powder, salt, and baking soda in a bowl. Blend the dry ingredients with the wet mixture until fully combined, then fold in the peanuts.
  • Form the dough into a 10x2-inch log, wrap it in waxed paper, and let it chill in the refrigerator for 3 hours.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously grease 2 baking sheets.
  • Take the dough out of the refrigerator and slice it into 1/8-inch pieces. Place them 1 inch apart on the cookie sheets.
  • Bake in the preheated oven until the edges turn golden brown, about 8 to 10 minutes. Let the cookies cool on the baking sheet for a bit before transferring them to a wire rack to cool completely. Repeat with the rest of the cookie dough.
