Peanut butter and honey granola bars with oats and golden raisins.
Ingredients:
  • 1 egg white
  • 1/2 cup honey
  • 1/2 cup creamy peanut butter (can use chunky if you want, will result in a more crumbly bar)
  • 1/4 teaspoon cinnamon
  • 3 cups Old Fashioned oatmeal oats (do not use instant or steel cut)
  • 1/2 cup (1 stick) butter, melted
  • 1/2 cup golden raisins
Instructions:
  • Prepare a 9x13 baking pan by lining it with parchment paper, ensuring that the paper hangs over the edges. Place the oven rack in the middle position and preheat the oven to 350°F.
  • Grind 1/2 cup of oats in a food processor until finely ground. Combine them with the remaining oats and cinnamon in a bowl, stirring until mixed. (If you don't have a food processor, proceed with the full amount of oats as usual.)
  • Whisk the egg white until frothy using a stand mixer or by hand. Incorporate the honey and peanut butter. Mix in the oat cinnamon mixture. Pour in the melted butter and combine thoroughly. Fold in the raisins.
  • Evenly spread the mixture over the bottom of the baking dish lined with parchment paper.
  • Bake in the oven for 25 minutes until golden brown. Cool for 5 minutes, then slice into 12-16 bars. Bake again at 300°F for 15 minutes. Cool completely before serving for the best texture.
