Decadent peanut butter layer cake topped with chocolate buttercream, inspired by peanut butter cups.
Ingredients:
  • 0.75 cup butter, softened
  • 0.75 cup creamy peanut butter
  • 2 cups packed brown sugar
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 (1 ounce) squares unsweetened chocolate
  • 2 (1 ounce) squares semisweet chocolate
  • 4 cups sifted powdered sugar
  • 0.25 cup cocoa powder
  • 0.25 cup milk
  • 2 teaspoons vanilla extract
  • 0.5 cup butter, softened
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 16 miniature peanut butter cups (such as Reese's®)
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare two 9-inch round cake pans by lining them with parchment paper and greasing.
  • Cream together butter and peanut butter using an electric mixer on medium speed until well combined. Gradually mix in brown sugar, followed by adding eggs one at a time, beating after each addition.
  • In a bowl, whisk together flour, baking powder, and salt. Alternate adding the flour mixture and milk to the peanut butter mixture, starting and finishing with the flour mixture. Mix on low speed until combined after each addition. Add vanilla extract and pour the batter evenly into the cake pans.
  • Bake in the preheated oven for 30 to 35 minutes until a toothpick inserted into the center of each cake comes out clean. Then, cool completely on a wire rack.
  • Once the cakes are cooling, melt unsweetened and semisweet chocolate in a double boiler over simmering water for 3 to 5 minutes. Stir frequently until smooth, then take it off the heat.
  • Using an electric mixer, whip 1 cup of butter until creamy. Slowly add melted chocolate, powdered sugar, cocoa powder, milk, and vanilla extract, and continue beating until the mixture reaches spreading consistency.
  • In a small bowl, combine peanut butter and 1/2 cup butter. Use an electric mixer on medium speed to whip until creamy. Gradually add powdered sugar and milk, mixing until frosting is thick and spreadable. Beat for an extra 3 minutes.
  • Take out 1 cooled cake layer from the pan and spread a layer of luxurious chocolate buttercream frosting. Place the second cake on top and beautifully frost the entire cake with more decadent chocolate buttercream.
  • Using a frosting pouch with a cake decorating tip, generously frost the top and bottom edges of the cake with peanut butter frosting. Place 16 dollops of frosting evenly around the edge of the cake and top each dollop with a mini peanut butter cup. Serve right away for a delightful treat.
