Peanut Butter Ice Cream Sandwiches

Satisfy your peanut butter craving with this quick and delicious recipe!
Ingredients:
  • 1 pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
  • 1 tablespoon water
  • 3 tablespoons vegetable oil
  • 1 egg
  • 4 1/2 cups chocolate or vanilla ice cream, slightly softened
  • Chopped peanuts or tiny candies, if desired
Instructions:
  • Preheat your oven to 375°F. Prepare the cookie mix according to the instructions on the pouch by adding water, oil, and egg. Roll the dough into 36 balls, each about 1 inch in size. Place the balls on an ungreased cookie sheet, spacing them 2 inches apart or use rounded teaspoonfuls. Flatten the dough balls in a crisscross pattern with a fork.
  • Bake for 8-10 minutes until edges are golden brown. Let cool for 2 minutes, then transfer to a cooling rack. Allow to cool completely, approximately 30 minutes.
  • Take 1/4 cup of ice cream and sandwich it between 2 cookies. Roll the edges of the ice cream in chopped peanuts or candies. Individually wrap the sandwiches in plastic wrap and freeze for about 30 minutes until firm. Keep stored in the freezer.
