Elevate peanut butter cookies by stuffing with ice cream and coating edges with tasty treats!
Ingredients:
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1/2 cup shortening
  • 1/4 cup butter or margarine, softened
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 cups ice cream, (any flavor), slightly softened
  • Miniature baking candies, bits or chips or chopped dry-roasted peanuts, if desired
Instructions:
  • In a large bowl, combine sugars, peanut butter, shortening, butter, and egg. Mix in flour, baking soda, baking powder, and salt. Cover and refrigerate for about 2 hours until firm.
  • Preheat the oven to 375°F. Roll the dough into 1 1/4-inch balls and place them about 3 inches apart on an ungreased cookie sheet. Flatten each ball in a crisscross pattern with a fork dipped in granulated sugar.
  • Bake until light brown, about 9 to 10 minutes. Then let cool on a wire rack for 5 minutes before transferring to cool completely.
  • Place a generous scoop of ice cream between two cookies to create each decadent ice cream sandwich. Gently roll the edges of the sandwiches in colorful candies for a pop of flavor. Wrap each sandwich tightly in plastic wrap to preserve freshness. Store the treats in the freezer in an airtight container for a cool and sweet indulgence anytime.
