Indulge in a decadent chocolate cake filled with fluffy peanut butter whipped cream.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 1/4 cups water
  • 1/2 cup creamy peanut butter
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1/4 cup butter or margarine
  • 1/4 cup packed brown sugar
  • 1 cup whipping cream
  • 1 container (1 lb) Betty Crocker™ Rich & Creamy chocolate frosting
  • 1 cup chopped peanuts, if desired
Instructions:
  • Preheat your oven to 350°F (or 325°F for dark or nonstick pans) and generously grease only the bottoms of 2 (8- or 9-inch) round cake pans with shortening or cooking spray.
  • In a large bowl, use an electric mixer to combine cake mix, water, 1/2 cup of creamy peanut butter, oil, and eggs. Mix on low speed for 30 seconds, then increase to medium speed and beat for 2 minutes, scraping the bowl occasionally. Pour the batter into the prepared pans.
  • Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, then gently run a knife around the sides of the pans to release the cakes. Transfer the cakes from the pans to a cooling rack. Let them cool completely for about 1 hour.
  • In a 2-quart saucepan, melt butter over medium heat. Stir in brown sugar and bring to a boil. Boil and stir for 1 minute, then remove from heat and refrigerate for 10 minutes.
  • In a chilled medium bowl, whip the cream on high speed until soft peaks form, then set it aside. In another medium bowl, blend 1/2 cup of peanut butter with the brown sugar until smooth and creamy. Gently fold the whipped cream into the peanut butter mixture until smooth and creamy.
  • Cut each cake layer in half to create 2 layers. Spread approximately 2/3 cup of peanut butter mixture onto each layer, leaving a 1/2-inch border. Frost the sides and top of the cake with frosting, then press peanuts onto the sides. Refrigerate the cake covered until ready to serve.
