Peanut caramel cream biscuits

Heavenly, easy and delicious biscuits.
Ingredients:
  • 125g butter, softened
  • 2.20 gm vanilla extract
  • 1 egg, at room temperature
  • 500.00 ml plain flour
  • 4.00 gm baking powder
  • 20.60 gm milk
  • 300g packet jersey caramel lollies, chopped
  • 41.60 gm crunchy peanut butter
  • 40.40 gm thickened cream
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays by lining them with baking paper.
  • In a small bowl, use an electric mixer to whip together butter, sugar, and vanilla until light and fluffy. Mix in the egg until fully incorporated. Gradually sift in the flour and baking powder, then pour in the milk and gently stir until just mixed.
  • Divide the dough in half, then roll out each piece between two lightly floured sheets of baking paper until it is 6mm thick.
  • Cut 20 rounds from each piece of dough using a 5cm fluted round biscuit cutter. Place on lined baking trays, giving space for spreading. Repeat with any remaining dough. Bake biscuits for 12 to 15 minutes, rotating trays halfway through, until light golden. Let biscuits cool completely on trays.
  • In a saucepan over gentle heat, combine caramel lollies, peanut butter, and cream. Stir continuously for 3 to 4 minutes until the mixture is melted and velvety. Take it off the heat and let it cool for about 30 minutes until slightly thickened.
  • Spread a generous amount of caramel cream on the flat side of one biscuit and press it gently against another biscuit to create a delicious sandwich. Repeat with the remaining biscuits and caramel cream. Serve and enjoy!
