Peanut miso chicken skewers

Succulent chicken skewers with irresistible homemade satay sauce.
Ingredients:
  • 2.00 stem lemon grass, pale section only, finely chopped
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1/4 tsp ground chilli powder
  • 4 (about 200g each) single chicken breast fillets, thinly sliced across the grain
  • 2 Lebanese cucumbers, ends trimmed, thinly sliced
  • 62.50 ml fresh coriander leaves
  • Jasmine rice, to serve
  • 4.60 gm peanut oil
  • 1 brown onion, halved, finely chopped
  • 2 tsp finely grated fresh ginger
  • 150g (1 cup) unsalted roasted peanuts, finely chopped
  • 2 x 140ml can coconut milk
  • 24.00 gm miso paste
  • 30.00 ml finely chopped dark palm sugar
  • 10.60 gm soy sauce
Instructions:
  • Mix together the lemon grass, coriander, turmeric, and chili powder in a glass or ceramic dish. Add the chicken and coat it evenly. Cover and refrigerate for 30 minutes to enhance the flavors.
  • To make the satay miso sauce, heat oil in a frying pan over medium heat. Sauté onion until golden, about 10 minutes. Stir in lemongrass and ginger, cook until aromatic, about 1 minute. Add peanuts, coconut milk, miso, palm sugar, and soy sauce. Bring to a boil, then simmer on low for 5 minutes until slightly thickened.
  • Preheat a barbecue grill or chargrill pan on high heat. Thread the chicken pieces onto skewers evenly. Grill for 2-3 minutes on each side until beautifully golden and fully cooked.
  • On serving plates, elegantly lay out the cucumber and coriander. Top with the flavorful chicken skewers. Serve with a side of satay miso sauce, steamed rice, and lime wedges.
