Rich and creamy vanilla coconut ice cream pie with chopped peanut crust, topped with M&Ms®, sprinkles, toasted coconut, or chocolate shavings.
Ingredients:
  • 1.3333333730698 cups finely chopped peanuts
  • 3 tablespoons margarine, melted
  • 2 tablespoons white sugar
  • 0.25 cup peanut butter
  • 0.25 cup light corn syrup
  • 0.25 cup flaked coconut
  • 3 tablespoons chopped peanuts
  • 1 quart vanilla ice cream, softened
  • 0.25 cup mini candy-coated chocolate pieces
Instructions:
  • Mix together the peanuts, butter, and sugar until well combined. Press the mixture onto the bottom and up the sides of a greased 9-inch pie plate. Chill in the refrigerator for 15 minutes before proceeding.
  • Combine creamy peanut butter and sweet corn syrup in a spacious bowl. Mix in shredded coconut and crunchy peanuts. Gently fold in rich ice cream until just mixed. Transfer mixture into the pie crust.
  • Cover and freeze until firm. Before serving, sprinkle with mini candy-coated chocolate pieces, if preferred.
