Sweet caramelized onion and pear meld with creamy brie in a delicious quesadilla perfect for picnics or parties.
Ingredients:
  • 1 sweet onion (such as Vidalia®), thinly sliced
  • 2 tablespoons honey
  • 0.5 teaspoon dried thyme
  • salt and ground black pepper to taste
  • 1 (10 ounce) package flour tortillas
  • cooking spray
  • 6 ounces Brie cheese, cut into 1/4-inch slices
  • 2 ripe d'Anjou pears, sliced 1/4-inch thick
Instructions:
  • In a skillet, gently sauté onions in oil until tender and transparent, about 10-15 minutes. Mix in honey, thyme, salt, and pepper, then cook until caramelized, around 10 minutes. Add pears and cook until slightly softened, approximately 2-3 minutes. Take off the heat and set aside.
  • Preheat a nonstick skillet over medium heat and coat with nonstick cooking spray. Layer 1 tortilla in the skillet, sprinkle 1/4 of the Brie over it, then add 1/4 of the onion-pear mixture on top. Place a second tortilla over the fillings. Press down with a smaller skillet or plate and cook until the bottom is lightly browned, about 2 to 3 minutes. Flip and cook until browned on the other side, about 2 to 3 minutes more. Transfer to a plate to serve.
  • Continue layering the tortillas with the savory Brie cheese and sweet onion-pear mixture. Cut the quesadillas into elegant wedges for sharing, or pack them in foil for a delightful picnic treat.
