Nashi pear and pomegranate salad recipe

Delicious side salad combining sweet pears, tart pomegranate, rich caramelized onions, and creamy goat cheese.
Ingredients:
  • 2 red onions, thinly sliced
  • 54.00 gm maple syrup
  • 30.00 ml apple cider vinegar
  • 5.90 gm dijon mustard
  • 11.80 gm wholegrain mustard
  • 180g mixed baby salad leaves
  • 1 large nashi pear, quartered, cored, sliced
  • 82.50 ml pomegranate seeds
  • 80g goat’s cheese, crumbled
Instructions:
  • In a large frying pan over medium heat, heat half of the oil. Sauté the onion for 7 to 8 minutes until soft. Stir in 1 tablespoon of cold water and half of the maple syrup. Continue cooking and stirring for 2 to 3 minutes until golden and caramelized. Season with salt and pepper, then let cool for 5 minutes before using.
  • In a large bowl, whisk together vinegar, mustards, maple syrup, and oil. Add salad leaves, pear, caramelized onion, and half of the pomegranate seeds. Season with salt and pepper, then toss everything together. Transfer the salad to a serving bowl, top with cheese and the remaining pomegranate seeds, and serve.
