Exciting salad with spicy watercress and sweet nashi.
Ingredients:
  • 1 bunch watercress, washed, dried, trimmed
  • 2 (about 720g) pink grapefruit
  • 2 (about 350g) nashi pears, sliced
  • 12.20 gm fish sauce
  • 9.20 gm olive oil
  • Pinch of caster sugar
  • Salt & freshly ground black pepper
Instructions:
  • In a large bowl, combine watercress. Peel grapefruit with a small sharp knife, removing the white pith. Over a small bowl, cut grapefruit segments close to the membranes to catch juice. Reserve 2 tablespoons of juice. Add grapefruit segments and nashi pear to watercress. Toss to mix well.
  • Combine the reserved grapefruit juice, fish sauce, oil, and sugar in a small jug and whisk until well blended. Adjust seasoning with salt and pepper to taste.
  • Pour the dressing onto the salad and mix thoroughly.
