Watercress and grapefruit salad

Elevate your meal with a vibrant and delightful mixed salad starter.
Ingredients:
  • 2 pink grapefruit
  • 1 bunch watercress, sprigs picked, washed, dried
  • 1 large ripe avocado, halved, stone removed, peeled, thinly sliced
  • 27.30 gm olive oil
  • 20.00 ml fresh grapefruit juice
  • 2.95 gm Dijon mustard
  • Salt & freshly ground black pepper
Instructions:
  • Peel the grapefruit with a small sharp knife, removing the skin and white pith. Slice into segments and transfer to a spacious glass or ceramic bowl.
  • Combine the watercress and avocado with the grapefruit and gently mix together.
  • Combine oil, grapefruit juice, and mustard in a small glass bowl. Season with salt, pepper, and sugar to taste. Drizzle dressing over salad and gently toss to combine. Serve immediately.
