Watercress and fig salad

Whip up a gourmet watercress and fig salad with just 5 simple ingredients!
Ingredients:
  • 45g hazelnuts
  • 80ml balsamic vinegar
  • 500.00 ml watercress sprigs
  • 2 ripe figs, broken into quarters
  • 18.40 gm hazelnut oil (see note)
Instructions:
  • 1. Preheat the oven to 200°C. Roast hazelnuts in a roasting pan for 5 minutes until toasted. Transfer warm hazelnuts to a tea towel and rub to remove skins easily. Halve hazelnuts and set aside.
  • In a small saucepan over high heat, bring vinegar to a boil. Reduce heat to medium-high and simmer for 5 minutes until it reduces to 1 1/2 tablespoons. Let it cool before using.
  • Assemble watercress, figs, and hazelnuts on plates. Finish with a drizzle of balsamic reduction and hazelnut oil. Serve promptly.
