Watercress and celery salad

Delightful and refreshing summer salad side dish.
Ingredients:
  • 3 celery stalks, trimmed
  • 100g watercress, trimmed, washed
  • 1 large avocado, halved, thinly sliced
  • 1 Lebanese cucumber, cut into 1cm cubes
  • 36.40 gm olive oil
  • 40.00 ml white vinegar
  • 5.90 gm dijon mustard
Instructions:
  • Thinly slice celery lengthwise using a vegetable peeler or small sharp knife. Combine celery with watercress, avocado, and cucumber in a bowl and toss together.
  • Combine oil, vinegar, and mustard in a jar with a lid. Season with salt and pepper, then shake vigorously. Pour the dressing over the salad, toss well, and serve.
