Celery and Stilton Soup

Creamy onion and celery soup blended with rich Stilton cheese, garnished with cheese crumbles and fresh watercress.
Ingredients:
  • 2 sticks butter
  • 1 onion, thinly sliced
  • 1.5 cups chopped celery
  • 4.25 cups water
  • 3.75 ounces Stilton cheese, crumbed and divided
  • 4 sprigs watercress, for garnish
  • 0.25 teaspoon freshly ground black pepper to taste
  • 1 pinch salt, or as desired
Instructions:
  • Gently melt the butter in a generous pot over medium low heat. Introduce the onions and saute for around 10 minutes, or until they turn translucent.
  • Combine the celery and water in the pot. Cover and bring to a boil, then simmer over low heat for 30 minutes, or until the celery is tender.
  • Sprinkle 2 1/2 ounces of flavorful Stilton cheese into the soup, stirring until it melts smoothly. Blend the soup in small batches until silky smooth, then transfer it to a fresh pot. Season with a pinch of freshly ground pepper and salt, mindful of Stilton's bold flavor.
  • Divide the mixture into bowls, generously sprinkle with the remaining cheese, and top it off with fresh watercress for a vibrant finish.
