Whip up a refreshing Italian salad with crisp celery and savory Parmesan for a vibrant, flavorful dish.
Ingredients:
  • 125ml olive oil
  • 3 eschalots, finely chopped
  • 2 anchovy fillets in oil, drained, finely chopped
  • 1 tsp toasted celery seeds (see note)
  • 2.40 gm celery salt (see note)
  • 2 tsp grated lemon zest
  • 60ml lemon juice
  • 1 bunch celery (with leaves), thinly sliced
  • 500.00 ml flat-leaf parsley leaves, torn
  • 500.00 ml mixed micro herbs
  • 75.90 gm toasted walnuts
  • Extra lemon wedges, to serve
Instructions:
  • Combine the oil, eschalot, anchovy, celery seeds, salt, lemon zest, and juice in a bowl, whisking until well incorporated. Let the flavors meld together for 1 hour.
  • In a large bowl, mix celery, herbs, walnuts, and Parmesan. Drizzle with the dressing and toss to combine. Transfer the salad to a platter and serve with lemon wedges.
