Elevate pasta salad with fresh asparagus and flavorful herb-infused garlic oil.
Ingredients:
  • 500g dried farfalle pasta
  • 2 bunches asparagus
  • 2 celery sticks, thinly sliced diagonally
  • 200g (2 cups) shredded cooked chicken
  • 250.00 ml chopped fresh continental parsley
  • 125ml (1/2 cup) extra virgin olive oil
  • 40.00 ml white balsamic vinegar
  • 40.00 ml chopped fresh chives
  • 2 garlic cloves
  • 40g (1/2 cup) shaved parmesan
Instructions:
  • Boil the pasta in a generously salted large saucepan until perfectly cooked. Refresh in cold water, then transfer to a spacious bowl.
  • Preheat a barbecue or chargrill on high while coating asparagus with a light spray of olive oil. Grill for 4 minutes, turning occasionally, until tender crisp and slightly charred. Then, cut the asparagus diagonally into 5cm lengths on a chopping board.
  • Combine the asparagus, celery, and chicken with the pasta, gently toss, and transfer to a platter.
  • In a blender, combine parsley, oil, vinegar, chives, and garlic until smooth. Season with salt and pepper. Pour over the pasta and sprinkle with Parmesan cheese.
