Whip up a delicious carrot soup on the stovetop with celery, onion, veggie broth, tarragon, and white wine for a flavorful twist!
Ingredients:
  • 2 tablespoons extra virgin olive oil
  • 1 small onion, minced
  • 1 small carrot, peeled and thinly sliced
  • 1 celery rib, thinly sliced
  • 0.5 teaspoon dried tarragon
  • 2 cups vegetable broth
Instructions:
  • In a medium saucepan, warm extra-virgin olive oil over medium-high heat. Sauté onion until tender in the fragrant oil for about 5 minutes. Add carrot, celery, and tarragon, and continue cooking until carrots are tender, stirring occasionally, for another 5 minutes.
  • Pour the broth and wine into the pot and bring it to a boil. Lower the heat and let it simmer for 15 minutes. Serve hot.
