Chicken and barley soup

Nourishing chicken soup to comfort and heal you.
Ingredients:
  • 1 roast chicken
  • 1 leek, trimmed, halved, washed, chopped
  • 1 large carrot, peeled, chopped
  • 2 celery stalks, chopped
  • 1 litre chicken style liquid stock
  • 750.00 gm cold water
  • 110.00 gm pearl barley, rinsed
  • 20.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Separate the chicken meat from the skin and bones, and shred the meat.
  • - Heat oil in a saucepan over medium-high heat. Add leek, carrot, and celery, cooking and stirring for 5 minutes until leek is tender. Pour in stock and 3 cups of cold water and bring to a boil. Toss in barley, then reduce heat to low. Simmer partially covered, skimming the surface, for 25 to 30 minutes until both vegetables and barley are tender.
  • Add succulent chicken, allowing it to cook for 10 minutes or until perfectly heated through. Gently incorporate fresh parsley, then generously season with salt and pepper before serving this delectable dish.
