Chicken and Barley Soup

Whip up a delicious rotisserie chicken and barley soup in no time using chicken broth and canned tomatoes.
Ingredients:
  • 1 carton (32 oz) Progresso™ chicken broth (4 cups)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 medium carrots, sliced (1 cup)
  • 2 medium stalks celery, sliced (1 cup)
  • 1 cup sliced fresh mushrooms (about 3 oz)
  • 1/3 cup uncooked quick-cooking barley
  • 1 teaspoon dried minced onion
  • 2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
Instructions:
  • In a 3-quart saucepan, combine all ingredients except for the chicken. Bring to a boil over medium-high heat, then lower heat to medium, cover, and simmer for 15 to 20 minutes until the barley is tender.
  • Add succulent chicken pieces to the pan. Cover and let it simmer for about 3 minutes until the chicken is perfectly heated through.
