Affordable family pie filled with nutritious silverbeet, celery, and vegetables.
Ingredients:
  • 18.20 gm olive oil
  • 1 medium white onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 medium red capsicum, finely chopped
  • 6 celery stalks, finely chopped
  • 1/2 bunch silverbeet, trimmed, leaves shredded
  • 8 sheets filo pastry
  • olive oil cooking spray
  • 5 eggs
  • 128.75 gm milk
Instructions:
  • Prepare a 6cm-deep, 22cm x 30cm ovenproof dish by greasing it.
  • In a large frying pan over medium-high heat, warm oil. Sauté onion and garlic for 3 minutes until onion softens. Stir in capsicum and celery, cook for 5 minutes. Add silverbeet and cook for 2 minutes until wilted. Drain mixture in a colander and let it cool for 15 minutes. Preheat the oven to 180°C/160°C fan-forced.
  • Lay one sheet of filo pastry on a flat surface and generously spray with oil. Repeat this step three more times, layering the filo sheets and oil each time. Line the base and sides of the dish with the prepared filo. Layer the remaining filo sheets with oil and cover with a damp tea towel until ready to use.
  • Spread the celery mixture evenly in the prepared dish. In a jug, vigorously mix eggs, milk, salt, and pepper. Pour this mixture over the celery. Lay the reserved filo layers over the filling and scrunch the sides to seal it. Lightly spray the top with oil.
  • Bake for 30 minutes or until golden brown, then cover with foil. Bake for an additional 30 minutes until the filling is set. Remove the foil, let stand for 5 minutes, then serve.
