Watercress and chive couscous

Delicious couscous dish complements meat and vegetarian dishes perfectly.
Ingredients:
  • 375.00 ml couscous
  • 375.00 gm boiling water
  • 250.00 ml trimmed watercress, finely chopped
  • 62.50 ml fresh chives, finely chopped
  • 1 garlic clove, crushed
  • 23.40 gm wholegrain mustard
  • 20.00 ml apple cider vinegar
  • 56.88 gm olive oil
Instructions:
  • In a heatproof bowl, combine couscous with boiling water. Cover and let it sit for 5 minutes until water is absorbed. Fluff the grains with a fork to separate them. Allow it to cool for 5 minutes before serving.
  • Combine watercress, chives, garlic, mustard, vinegar, and oil in a bowl. Mix well, then add to couscous. Season with salt and pepper to taste before serving.
