Elevate your appetizer game with a unique and unforgettable dish!
Ingredients:
  • 1 medium brown onion, chopped
  • 300g celeriac
  • 1 litre chicken style liquid stock or vegetable liquid stock
  • 300g broccoli, cut into small florets
  • 375.00 ml watercress sprigs, roughly chopped (see note)
  • 83.33 gm pure cream
  • 40.00 ml roughly chopped fresh chives
  • Pure cream, to serve
  • Wholemeal bread, toasted, to serve
Instructions:
  • In a saucepan over medium heat, sauté onion and garlic in oil for 5 minutes until onion is soft.
  • Combine celeriac, stock, and 1 cup cold water in a pot and bring to a boil. Reduce heat to medium-low and simmer covered for 20 minutes until celeriac is tender. Introduce broccoli and cook partially covered for 15 minutes until tender. Add watercress, then season with salt and pepper before removing from heat.
  • Blend the celeriac mixture until silky. Transfer back to the pan, pour in the cream, and simmer for 5 minutes until warm. Season with pepper, then carefully pour into bowls. Garnish with fresh chives and a dollop of cream before serving with toasted bread.
