Celeriac, pear and blue cheese soup

Whip up a luxurious soup combining velvety celeriac, ripe pear, and bold blue cheese for a sophisticated appetizer.
Ingredients:
  • 40g butter
  • 1 brown onion, halved, finely chopped
  • 1 garlic clove, crushed
  • 2 tsp finely chopped fresh thyme
  • 1 large (about 750g) celeriac, peeled, finely chopped
  • 2 ripe beurre bosc pears, peeled, cored, finely chopped
  • 2L (8 cups) vegetable liquid stock
  • 125g blue cheese (King Island Roaring Forties brand), crumbled
  • Salt & freshly ground black pepper
  • Fresh thyme leaves, to serve
Instructions:
  • In a large saucepan over medium heat, melt butter until foamy. Stir in onion, garlic, and thyme and cook for 5 minutes until onion softens. Add celeriac and pear, cook until lightly golden for about 5 minutes. Pour in stock, bring to a boil, then reduce heat and simmer covered for 20 minutes until celeriac is tender. Let it cool for 5 minutes before serving.
  • Stir in the cheese until combined. Blend half of the celeriac mixture in a blender until smooth. Transfer to a saucepan, then repeat with the rest. Heat the soup over low heat for 3 minutes until warm. Season with salt and pepper. Serve in mugs or bowls, garnish with thyme leaves, and a sprinkle of pepper.
