Elevate celeriac with a drizzle of olive oil and fragrant herbs.
Ingredients:
  • 1 celeriac roughly 1kg
  • olive oil
  • a few sprigs fresh lemon thyme
  • sea salt
Instructions:
  • Prepare the celeriac by shaving off the ends and peeling away the skin with a knife, making sure to remove any imperfections. Cut the celeriac into 1cm cubes. Heat olive oil in a casserole pan and add lemon thyme, then add the diced celeriac and salt. Cover and cook over medium heat for 20-25 minutes until tender, stirring occasionally. For extra color, cook uncovered for another 4 minutes. Serve as is or blend with stock for soup. Enjoy this versatile dish!
