Pear, goat's cheese and candied walnut bites

Delicious pear, goat cheese, and candied walnut bites - perfect for snacking or serving as appetizers.
Ingredients:
  • 115.00 gm walnuts
  • 24.00 gm icing sugar mixture
  • 120g packet goat's cheese
  • 20.00 ml finely chopped fresh chives
  • 20.00 ml fresh thyme leaves
  • 3 corella pears, cored (see note)
Instructions:
  • 1. Preheat a non-stick frying pan over medium-high heat. Toast walnuts in the pan, stirring occasionally, for 2 to 3 minutes until fragrant. Sprinkle sugar over the walnuts and continue to cook, stirring continuously, for 1 minute until the sugar caramelizes and coats the walnuts. Transfer the caramelized walnuts to a bowl.
  • Combine cheese, chives, thyme, salt, and pepper in a bowl. Mix until fully incorporated. Break walnuts into small pieces.
  • Core the pears with an apple corer, then slice them into 1cm rounds. Spread with goat's cheese mixture, top with candied walnuts, sprinkle with pepper, and serve.
