Ingredients:
  • 3 william or beurre bosc pears, quartered and cored
  • 60ml olive oil
  • 80g walnut pieces
  • 60ml balsamic vinegar
  • 57.20 gm honey
  • 80g wild or baby rocket
  • 150g blue cheese
  • Salt, to season
Instructions:
  • Preheat the oven to 220°C. Arrange 3 quartered and cored william or beurre bosc pears on a baking tray. Drizzle them with 1 tablespoon of olive oil and season to taste. Bake for 20-25 minutes.
  • Heat up the 1/4 cup (60ml) of olive oil on medium heat until warm. Toss in the 80g of walnut pieces and sauté for 3-5 minutes. Remove from heat and set aside.
  • Combine the white balsamic vinegar and honey with the walnut mixture, mix well and season to taste. Arrange wild or baby rocket on plates, place pears on top, and sprinkle with blue cheese. Finish by drizzling the dressing over the salad.
