Delicious and aromatic tray bake, perfect for breakfast or brunch.
Ingredients:
  • 2 pears, cored
  • 7 Weet-Bix™ Gluten Free wheat biscuits, broken into pieces
  • 6 large eggs
  • 257.50 gm milk, or So Good™ Soy or Almond Milk
  • 2.50 gm cinnamon
  • 54.00 gm maple syrup, divided
  • 125.00 ml sliced almonds
Instructions:
  • Preheat your oven to 180°C (350°F) and gently grease a shallow 1.5 liter baking dish.
  • Dice one and a half pears and spread them in the bottom of the baking dish. Mix Weet-Bix™ Gluten Free wheat biscuits with the pears and spread evenly in the dish.
  • Combine eggs, milk, cinnamon, and half of the syrup in a large jug. Gently pour the egg mixture into the baking dish, using a large spoon to even out the surface and ensure all ingredients are submerged.
  • Arrange thinly sliced pear on top of the egg mixture. Drizzle almonds with remaining maple syrup and sprinkle over the sliced pear.
  • Cover the dish with foil and bake for 60 minutes. Remove the foil and bake for an additional 5-10 minutes until golden on top and firm in the center. Allow it to cool on a rack for at least 15 minutes before cutting. Enjoy warm or at room temperature.
