Make delicious pear muffins with fresh seasonal pears.
Ingredients:
  • 150.00 gm self-raising flour, sifted
  • 150.00 gm wholemeal self-raising flour, sifted
  • 45.00 gm brown sugar
  • 2.50 gm ground cinnamon
  • 3 pears, peeled, diced
  • 56.88 gm olive oil
  • 1 egg
  • 1/2 tsp almond essence
  • 32.00 gm brown sugar, extra
  • 20.00 gm almond meal
Instructions:
  • Preheat your oven to 200°C and generously grease a 12-hole muffin pan with a 1/3-cup capacity.
  • In a bowl, mix together flours, sugar, and cinnamon. Add in the pears. In a separate jug, whisk together milk, oil, egg, and almond essence using a fork. Create a well in the center of the flour mixture and pour in the milk mixture. Spoon the batter into muffin holes.
  • Mix together the additional sugar and almond meal, then generously sprinkle the mixture over the muffins. Bake in the oven for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Allow the muffins to rest in the pan for 10 minutes before transferring them to a wire rack. Enjoy these delicious treats while they are still warm.
