Ingredients:
  • 2 William or Packham pears, peeled
  • 100g reduced-fat natural yoghurt
  • 200g apricot halves in juice, drained, juice reserved
  • 250.00 ml 98% fat-free wholegrain cereal (see note)
Instructions:
  • Preheat your oven to 180°C. Cut each pear into 8 wedges, removing the cores. In a saucepan, combine the pears with 1/2 cup of cold water. Cover and bring to a gentle boil over high heat, then reduce heat to medium. Cook uncovered for 5 minutes until pears are just tender.
  • In a jug, combine yogurt and 2 tablespoons of reserved apricot juice, whisk until smooth.
  • Drain the pears, then distribute them and the apricots evenly among four 150ml-capacity ovenproof ramekins. Drizzle the remaining apricot juice over the fruit and top with cereal, pressing down gently to pack it in. Place the ramekins on a baking tray and bake for 10 minutes until heated through. Serve with the yogurt mixture.
