Ingredients:
  • 262.50 gm self-raising flour
  • 75g butter, chilled, chopped
  • 45.00 gm brown sugar
  • 6 dried pears, roughly chopped
  • 85.00 gm sultanas
  • 1 egg, lightly beaten
  • 84.98 gm skim milk
Instructions:
  • Preheat your oven to 220°C and lightly grease 2 baking trays. In a large bowl, sift the flour and add the butter. Rub the butter into the flour with your fingertips until it resembles coarse breadcrumbs. Then, mix in the sugar, pears, sultanas, egg, and milk. Stir until the batter drops easily from a spoon, adding more milk if needed.
  • Spoon mixture onto trays with space in between. Bake for 7 minutes, then rotate trays in oven and continue baking for 3 to 5 minutes until light golden.
  • Allow cakes to cool on trays for 5 minutes, then move them to a wire rack to cool completely.
