Delicious cake with rich buttercream frosting.
Ingredients:
  • 1 (15 ounce) can Libby's® Pear Halves
  • 2 eggs
  • 1 cup sugar
  • 2 cups flour
  • 4 tablespoons butter, softened
  • 3 cups confectioners' sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk, or more as needed
Instructions:
  • Preheat the oven to 350 degrees F and generously grease a 9x13 baking pan.
  • Dice the pears, saving the juice.
  • In a large bowl, whisk together eggs and sugar. Gently fold in pears and juice until combined. Mix in flour, salt, and baking soda. Transfer the batter into a greased pan.
  • Bake at 350°F until a toothpick inserted in the middle comes out clean, about 23-30 minutes.
  • Allow the delicious creation to cool to the perfect temperature before adding the luscious frosting.
  • Add butter to a mixing bowl.
  • Combine powdered sugar and cinnamon in a sifter. Transfer the mixture to a mixing bowl and beat it with vanilla.
  • Gradually pour in 1 tablespoon of milk at a time until you achieve the desired consistency.
