Pear Relish

Spicy pear relish with fresh fruit, onions, peppers, mustard, and jalapeños. Perfect for canning.
Ingredients:
  • 12 large pears
  • 3 large onions, coarsely chopped
  • 3 large green bell peppers, seeded and coarsely chopped
  • 4 jalapeno peppers, coarsely chopped
  • 2 cups apple cider vinegar
  • 2 cups white sugar
  • 9 ounces prepared mustard
  • 1 tablespoon salt
  • 10 (1 pint) canning jars with lids and rings, or as needed
Instructions:
  • In a large stockpot, simmer pears in water until tender for about 20 minutes. Drain, cool, and then peel, core, and coarsely chop the pears.
  • In small batches, finely chop pears, onions, green bell peppers, and jalapeño peppers in a food processor. Add the chopped mixture, along with any juices, to a large pot.
  • Combine vinegar, sugar, mustard, and salt in the mixture until fully incorporated. Boil, then simmer over medium-low heat until flavors meld and relish thickens, approximately 1 hour.
  • Place jars and lids in boiling water for a minimum of 5 minutes to sterilize. Fill hot jars with relish, leaving 1/4 inch of space from the top. Remove air bubbles by running a knife or thin spatula around the inside of the jars. Clean rims with a damp paper towel to remove residue, then seal with lids and screw on rings.
  • Prepare a large stockpot by filling it halfway with water and placing a rack at the bottom. Bring the water to a boil. Using a jar holder, carefully lower jars into the boiling water, making sure they are 2 inches apart. Add more boiling water to ensure the jars are covered by at least 1 inch. Cover the pot, bring it to a rolling boil, and process for around 20 minutes or as recommended for your location.
  • After simmering, cool the jars in the stockpot, allowing space between each one, for 12 to 24 hours. Check the lids by pressing the center to ensure they are secure. Afterward, remove the rings and store the jars in a cool, dark place.
