Delicious salad with mixed greens, pears, toasted walnuts, and Gorgonzola topped with a light, flavorful dressing.
Ingredients:
  • 2 pears - peeled, cored and sliced
  • 1 cup port wine
  • 2 shallots, thinly sliced
  • 1 clove garlic, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons balsamic vinegar
  • 6 cups assorted salad greens
  • 1 cup crumbled Gorgonzola cheese
  • 1 cup chopped walnuts, toasted
Instructions:
  • Preheat the broiler in the oven. Place pear slices in a single layer on a baking sheet and broil for 3 to 5 minutes until nicely browned. Allow them to cool before using.
  • - In a saucepan, pour in the port wine and boil until reduced by half. Remove from heat and let it cool. Transfer the cooled wine to a blender or food processor, then add shallots, garlic, mustard, and vinegar. Blend until smooth.
  • On four serving plates, portion out the salad greens equally. Top each pile of greens with broiled pear slices and a sprinkle of Gorgonzola cheese. Drizzle dressing over each plate, then finish with a sprinkle of walnuts. For a communal option, combine all ingredients in a large bowl. Enjoy!
