Pear crunch salad

Kid-friendly pear salad with interactive dressing - a playful and delicious way to enjoy fresh produce.
Ingredients:
  • 150 g watercress
  • 2 heads of chicory different colours if possible
  • 1 lemon
  • 2 tablespoons extra virgin olive oil
  • sea salt
  • freshly ground black pepper
  • 1 firm pear
  • 40 g blue cheese, such as Stilton or Cashel Blue
Instructions:
  • Prepare chicory (endive) by discarding any tatty watercress leaves, trimming chicory bases, and slicing them finely into a serving bowl. Squeeze lemon juice into a jar, catch any pips, add olive oil, salt, and pepper, secure the lid, and shake vigorously. Adjust taste with more lemon juice or oil. Slice pear into matchsticks, place over watercress, squeeze lemon juice to prevent browning, crumble blue cheese, drizzle dressing, toss gently, and enjoy.
