Crunchy raw beetroot salad with feta & pear

Try this vibrant beet salad for a simple and delicious snack or appetizer.
Ingredients:
  • 3 ripe pears
  • 4 large beetroot
  • 200 g feta cheese
  • a few sprigs of fresh mint
  • 1 large handful of sunflower seeds optional
  • 1 lemon
  • extra virgin olive oil
Instructions:
  • Prepare the dressing by combining freshly squeezed lemon juice, 10 tablespoons of oil, a pinch of sea salt, and black pepper in a jam jar. Close the lid tightly, shake well, and set aside. Slice the pears and beets into fine matchsticks using a matchstick peeler, mandolin, or box grater if needed. Toss the matchsticks with a small amount of the lemon oil dressing, adjusting the seasoning to taste. Arrange the salad on plates or a platter, crumble feta on top, and sprinkle with chopped mint leaves and sunflower seeds if desired.
