"Delicious banana bread by 'Nillawan' with crunchy raw almonds."
Ingredients:
  • 437.50 ml plain flour
  • 2.00 gm baking powder
  • 2.50 gm bicarbonate of soda
  • Pinch of salt
  • 141.90 gm caster sugar
  • 125.00 ml raw almonds, coarsely chopped
  • 8.80 gm vanilla essence
  • 2 eggs, lightly beaten
  • 115.00 gm vegetable oil
  • 260.00 gm mashed banana
Instructions:
  • Preheat your oven to 190C (170C fan-forced). Grease a 7cm-deep, 10 x 20cm loaf pan with cooking spray. Line the base and sides with baking paper, making sure it extends 3cm above the rim.
  • In a large bowl, sift together the flour, baking powder, and bicarbonate of soda. Add salt, sugar, and nuts, then make a well in the center. Pour in the vanilla, eggs, oil, and banana. Gently stir until just combined.
  • Pour the mixture into the prepared pan and bake for 1 hour or until a skewer inserted into the center comes out clean. Allow it to cool in the pan for 5 minutes before transferring to a wire rack to cool further.
