Add crunchy raw pepitas to pumpkin muffin batter for a delicious twist.
Ingredients:
  • 2 cups pumpkin puree
  • 2 cups white sugar
  • 0.66666668653488 cup applesauce
  • 0.33333334326744 cup safflower oil
  • 3 eggs, beaten
  • 0.25 cup shelled, raw pumpkin seeds
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground nutmeg
  • 1 tablespoon pumpkin pie spice
  • 0.5 teaspoon baking powder
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 3 muffin pans by greasing or lining them.
  • Combine pumpkin, sugar, applesauce, oil, and eggs in a bowl and mix until smooth; gently fold in pumpkin seeds. In a separate bowl, mix flour, baking soda, cinnamon, nutmeg, pumpkin pie spice, salt, and baking powder. Gradually stir the flour mixture into the pumpkin mixture until just combined, then distribute the batter among the muffin cups.
  • Bake until a toothpick inserted in the center of a muffin comes out clean, about 20-25 minutes in the preheated oven.
