Light and fluffy pumpkin muffins sweetened with maple syrup and made with spelt flour for a delightful twist.
Ingredients:
  • 1.5 cups whole grain spelt flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking powder
  • 0.5 cup maple syrup
  • 0.33333334326744 cup melted butter
  • 2 large eggs
  • 1 cup pumpkin puree
  • 0.25 cup golden raisins
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 12-cup muffin tin by greasing it or lining the cups with paper liners.
  • In a bowl, mix together flour, pumpkin pie spice, baking soda, salt, and baking powder until well combined. Add maple syrup, melted butter, and eggs, and mix until fully incorporated. Gently fold in pumpkin puree and raisins. Spoon the batter into muffin cups. Avoid overmixing.
  • Bake until the tops spring back when lightly pressed, around 20 to 25 minutes. Let them cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
