Delicious pumpkin muffins with a buttery, crunchy topping.
Ingredients:
  • 0.75 cup brown sugar
  • 0.75 cup white sugar
  • 0.5 cup butter, softened
  • 2 eggs
  • 1 cup pumpkin puree
  • 0.33333334326744 cup water
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 0.33333334326744 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon butter
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 18 muffin cups by greasing and flouring them.
  • Cream together 3/4 cup brown sugar, white sugar, and 1/2 cup butter using an electric mixer until smooth. Mix in eggs until incorporated, then add pumpkin puree and water.
  • In a separate bowl, combine 1 3/4 cups of flour, baking soda, salt, 1 teaspoon of cinnamon, ginger, and nutmeg. Then mix this flour mixture into the pumpkin mixture and spoon the batter into the prepared muffin cups.
  • Mix together the 1/3 cup brown sugar, 1 tablespoon flour, 1 tablespoon butter, and 1/4 teaspoon cinnamon in a bowl until the mixture becomes crumbly. Sprinkle the streusel over each muffin.
  • Bake in the oven until a toothpick inserted in the center of a muffin comes out clean, which should take 20 to 25 minutes.
