Pumpkin chocolate chip muffins with a hint of cinnamon.
Ingredients:
  • cooking spray
  • 1 (15 ounce) can pumpkin puree
  • 0.66666668653488 cup white sugar
  • 0.25 cup vegetable oil
  • 0.5 cup applesauce
  • 2 cups all-purpose flour
  • 1 (1 ounce) package sugar-free instant vanilla pudding mix
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 (6 ounce) package semisweet chocolate chips, divided
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then line 16 muffin cups with paper liners and give them a light spray with cooking spray.
  • Combine the pumpkin puree, egg, sugar, vegetable oil, applesauce, and vanilla extract in a bowl and mix until well combined.
  • In a large bowl, combine flour, pudding mix, baking powder, cinnamon, salt, and baking soda. Add half of the chocolate chips and stir. Pour in the pumpkin mixture and mix well. Spoon the batter into muffin cups and sprinkle the rest of the chocolate chips on top.
  • Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
