Indulgent Pumpkin Chocolate Chip Muffins blend pumpkin spice with rich chocolate for a cozy breakfast treat. Ideal for chilly mornings, they offer a comforting taste sensation.
Ingredients:
  • Unsalted butter, for greasing muffin pan, optional
  • 2 cups (240g) all-purpose flour, plus more for muffin pan
  • 1 tablespoon pumpkin pie spice
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 (15-ounce) can pumpkin purée
  • 1 1/4 cups (270g) light brown sugar, packed
  • 1/2 cup vegetable oil
  • 1 cup (170g) semi-sweet chocolate chips
Instructions:
  • Preheat the oven to 375°F. Line a standard 12-well muffin pan with liners or grease with butter and dust with flour if needed.
  • In a large bowl, combine the flour, pumpkin pie spice, baking powder, baking soda, and salt with a gentle whisk until fully blended.
  • Combine the pumpkin purée, brown sugar, eggs, and vegetable oil in a medium bowl and whisk until well mixed.
  • Combine the pumpkin mixture with the flour mixture until just combined with no visible streaks of flour. Don't overmix; a few lumps are fine. Gently fold in the chocolate chips.
  • Distribute the muffin batter: Fill each of the 12 muffin liners almost to the brim with the batter, ensuring that they are evenly filled.
  • Bake the muffins in the oven for 20 minutes or until a toothpick inserted in the center comes out clean.
  • Let the muffins rest in the pan for 5 minutes, then move them to a wire rack to cool for at least 10 minutes. Enjoy warm or at room temperature.
