Irresistible vegan pumpkin muffins with chocolate chips for a decadent, guilt-free treat.
Ingredients:
  • 2 cups whole wheat flour
  • 0.5 cup packed brown sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground nutmeg
  • 1 (15 ounce) can solid-pack pumpkin
  • 0.5 cup chocolate chips
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare 12 muffin cups with paper liners.
  • In a large bowl, combine whole wheat flour, brown sugar, baking powder, cinnamon, baking soda, salt, and nutmeg. Add pumpkin and water to the dry ingredients, stirring until just combined. Then gently fold in the chocolate chips. Fill the muffin cups almost to the top with the batter.
  • Bake in the preheated oven for 25-30 minutes until muffin tops are lightly browned and bounce back when touched gently. Allow muffins to cool in pans for 5 minutes, then transfer to a wire rack to cool completely.
