Annual tradition pumpkin chocolate chip muffins, perfect for fall and Halloween parties. Best warm.
Ingredients:
  • 2 cups white sugar
  • 1 (15 ounce) can pumpkin
  • 1.5 cups vegetable oil
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 2 cups semisweet chocolate chips
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and prepare two 12-cup muffin pans by greasing lightly or lining with paper baking cups.
  • In a large bowl, vigorously beat together eggs, sugar, pumpkin, and oil until smooth.
  • Combine flour, baking soda, baking powder, cinnamon, and salt in a medium bowl. Then, mix it into the egg and pumpkin mixture. Gently fold in the chocolate chips before transferring the batter to the muffin pans.
  • Bake in the preheated oven for 15 to 20 minutes until a toothpick inserted in the center comes out clean. Remove muffins from the pans and let them cool on a wire rack.
