Irresistibly moist pumpkin muffins with warm spices and chocolate chips, perfect for a cozy fall treat.
Ingredients:
  • 0.25 cup vegetable oil
  • 0.75 cup canned pumpkin
  • 0.25 cup water
  • 1.5 cups all-purpose flour
  • 0.75 teaspoon baking powder
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Prepare all ingredients.
  • Preheat the oven to 400 degrees F (200 degrees C), then prepare your muffin pan by greasing and flouring it or using paper liners.
  • Combine sugar, oil, and eggs in a medium bowl and whisk until smooth. Gently mix in pumpkin and water until fully incorporated.
  • Combine flour with a medley of baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a separate bowl.
  • Combine the pumpkin mixture with the flour mixture, stirring gently until just combined. Be careful not to overmix. Fold in the chocolate chips.
  • Spoon batter into muffin cups, filling them 2/3 full.
  • Bake in the hot oven until a toothpick inserted in the center comes out clean, for about 20 to 25 minutes.
