Light and flavorful pumpkin pancakes, a quick and delicious treat perfect with butter and syrup when warm.
Ingredients:
  • 1.25 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup pumpkin puree
  • 1 egg, beaten
  • 1 tablespoon vegetable oil
Instructions:
  • Combine the flour, sugar, baking powder, cinnamon, and nutmeg by sifting them together in a bowl.
  • In a bowl, combine milk, pumpkin, egg, and oil with a whisk. Pour the milk mixture into the flour mixture and stir until just moistened, leaving a slightly lumpy batter.
  • Preheat a lightly oiled griddle over medium-high heat to 350 degrees F (175 degrees C). Spoon batter onto the griddle and cook until bubbles form and edges are dry, then flip and cook until browned on the other side. Repeat with remaining batter.
