Pumpkin ginger muffins made simple with pancake mix and topped with a delicious glaze.
Ingredients:
  • cooking spray
  • 2 cups pancake mix
  • 1 cup pumpkin puree
  • 0.5 cup fat-free milk
  • 0.5 cup confectioners' sugar
  • 1 teaspoon ground ginger
  • 0.33333334326744 cup confectioners' sugar
  • 1 tablespoon fat-free milk
Instructions:
  • Preheat the oven to a piping hot 450°F (230°C), then generously coat a muffin tin with cooking spray.
  • In a large bowl, mix pancake mix, pumpkin puree, milk, confectioners' sugar, and ginger until well combined. Spoon the mixture into the prepared muffin tin.
  • Bake in the preheated oven for about 12 minutes until a toothpick inserted in the center comes out clean. Then, cool on a wire rack.
  • Combine confectioners' sugar and milk until velvety. Pour the glaze over the muffins.
