Whip up our quick homemade pancake mix in 5 minutes for fluffy, buttery pancakes anytime. Lasts up to 6 months!
Ingredients:
  • For the pancake mix (makes 7 cups):
  • 6 cups (940 g) all-purpose flour
  • 1/3 cup (77 g) granulated sugar
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons kosher salt
  • To make the pancakes (makes 6 pancakes):
  • 1 cup pancake mix
  • 3/4 cup milk, or 1 cup buttermilk
  • 1 large egg
  • 1 tablespoon melted butter, plus more for the pan
Instructions:
  • Prepare the mix: In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt. Transfer the mixture to an airtight container labeled "batter recipe" on a note card attached with tape. Store for up to 6 months.
  • For the pancakes: Place 1 cup of mix into a medium mixing bowl. In a separate small mixing bowl, whisk together milk, egg, and vanilla extract until smooth. Slowly pour melted butter into the milk mixture while continuously whisking. Add the egg mixture to the pancake mix and gently stir with a spatula until just combined; a few lumps are okay.
  • To cook the pancakes: Heat a large skillet or griddle over medium heat until a few droplets of water sizzle on the surface. Add a tablespoon of butter and wait for it to melt. Pour 1/3 cup of pancake batter onto the skillet, making sure not to overcrowd. Cook until bubbles form on top and edges appear slightly dry, then flip. Cook for 3 minutes on the first side, then 1 to 2 minutes more after flipping until lightly golden with crispy edges.
