Indulgent sweet tart with buttery base, rich fillings, caramelized fruits, and syrup.
Ingredients:
  • 40.00 gm water
  • 4 large pears, peeled, cored, quartered
  • 21.00 gm fresh lemon juice
  • 20.00 gm melted butter
  • 4.40 gm vanilla essence
  • 1 sheet (25 x 25cm) frozen butter puff pastry, just thawed
  • 250g mascarpone
  • 32.00 gm brown sugar
Instructions:
  • In a 20cm ovenproof non-stick frying pan over medium heat, combine water and 100g (1/2 cup) of sugar. Stir and cook for 5 minutes until the sugar dissolves. Let it simmer for 6-7 minutes until the syrup turns light golden, then remove from heat.
  • In a bowl, toss the pear with lemon juice, butter, vanilla, and remaining sugar. Arrange pears, cut side up and slightly overlapping, in a frying pan. Cook over medium-low heat for 6-7 minutes until pears begin to soften. Let cool completely before serving.
  • Preheat your oven to 200ºC. Cut a pastry disc slightly larger than the pan's top. Lay it over the pear, gently tucking in the edges. Bake for 30 minutes until the pastry is crisp and golden. Let it cool for 10 minutes before serving.
  • Prepare the brown sugar mascarpone by combining mascarpone and sugar in a bowl, stirring until a swirled effect is achieved.
  • Flip the tart onto a platter and enjoy with brown sugar mascarpone.
